Μαγειριτσα is prepared in the same way – soup from the entrails of the lamb that will be grilled tomorrow. It helps prepare the stomach after a 7-week fast to accept a huge amount of meat from this most traditional lamb.

You will need

Heat olive oil in a saucepan and add green onions and dill. You leave them to fry and throw in the entrails and liver. Leave it to cook together – then throw in a spoonful of flour and pour in wine. Pour out 6 cups of water, close the pan. Cook until done – add rice 15 minutes before the end. Before eating αυγοκόβετε – make a sauce from raw eggs, lemon, and broth from the soup. It must be placed before the food itself – and without it, this food has no taste!
