Sauerkraut: not so simple

It would seem that it would be easier to ferment cabbage, fortunately, now is its season.

However, according to a certified nutritionist, cabbage may turn out to be an enemy. Let’s take a closer look at what dangers lurk in our beloved sauerkraut. Who can, who can’t, how not to harm yourself and turn “food” into medicine.

It’s unlikely that you have thought about the fact that sauerkraut can cause migraines, harm the thyroid gland, and increase allergic reactions in the body. In general, if you are interested, you can learn much more about this by watching the video.

Here is a condensed retelling of the contents of the video, which was posted on YouTube by a nutritionist. To create it, they were studied and “shoveled” 86 scientific studies. Links are attached.

1. The wrong method of sourdough can reduce the usefulness of cabbage tenfold. It is necessary to correctly calculate how much salt to put, say, per 1 kg of product. It turns out it’s not “to taste” at all. We do not use iodized salt. Only cooked, without additives (from 12:52 minutes).

2. The period of “infusion of cabbage” is absolutely precisely defined. However, so does the time to eat it.

3. It is better to prefer red cabbage or a mixture with white cabbage for fermentation, compare the nutrients in both.

4. Very dangerous bacteria “live” in raw cabbage (Escherichia coli, Staphylococcus aureus, Salmonella, Streptococcus, Listeria, etc.). So what to do about it, how not to harm yourself? It is known that these bacteria die in sauerkraut during its fermentation. But not earlier than after 7 days. And to completely neutralize pathogens, it takes at least 9 days. See video from 15:21 minutes.

5. How not to harm yourself if you have problems with the pancreas or thyroid gland, and you love sauerkraut so much! See video from 17:13 min.

6. Sauerkraut can trigger migraines, increase blood pressure, and intensify an allergic reaction. Find out why. Video from 21:00 min.

7. The simplest technology for ripening cabbage (from 34:17 min).
