The professor made an attempt on "sacred": "All Italian cuisine is Italian-American".

Professor of the University of Parma Alberto Grandi says: “Everything you know about Italian cuisine is a lie.”

According to the professor, the authorship of carbonara, like many other Italian dishes, belongs to the Americans. Spaghetti with small pieces of guanciale or pancetta, egg sauce and pecorino cheese – carbonara pasta, popular all over the world, is called the most typical dish of Rome and the Lazio region. Is it possible that she is actually from the USA? Cuisine historian and culinary identity podcaster Alberto Grandi is absolutely convinced of this:

“The very first carbonara recipe was published in Chicago in 1953. Many Italians went to America, so almost all cooking, all Italian cuisine is Italian-American.”

After his interview with the Financial Times, a scandal erupted on the streets of the Italian capital and on social networks, temperamental Italians were not shy in their expressions. The most “delicate” of them sounded like this:

“That can’t be! Can you tell me what I really think? That’s complete nonsense!”
“Americans eat pineapple pizza, that’s their cuisine.”

Alberto Grandi claims that Neapolitan pizza was perfected in New York, and the most authentic parmesan taste can only be found in Wisconsin. And, after the reaction of the Italians, he jokes that now he must leave the house only “with bodyguards, like the writer Salman Rushdie.”
