For homemade mayonnaise, you need to beat two yolks with salt, sugar and mustard for one minute. Then a mixture of vegetable and olive oils is added, followed by wine vinegar. Don’t stop beating the mixture. To give an orange flavor in a saucepan, mix finely chopped shallots and part of the orange juice, boil until thickened for a couple of minutes. When cool, add to the whipped mixture, as well as the zest and the second part of the orange juice.
