Cheesecake without baking for Valentine’s Day with strawberries and mascarpone cream cheese. Delicious dessert on the festive table.
cookies – 200 grams butter – 80 grams
For berry jelly: strawberry puree with sugar – 600 grams (300 grams for each layer) gelatin – 20 grams (10 grams for each layer) 200 ml for each layer) powdered sugar – 100 grams vanillin gelatin – 16 grams (8 grams for each layer)
For the base of the cheesecake, crush the cookies into crumbs and mix it with melted butter. We put it on top of a sheet of parchment at the bottom of a detachable form with a diameter of 20 cm. Put it in the refrigerator for 20 minutes. Beat cream cheese with a mixer, add vanilla and powdered sugar, continue to beat until the powder dissolves. We divide the cream into two even parts for layers in the cheesecake. For the first part of the cream, soak the gelatin and heat half the cream, do not boil. Dissolve the gelatin in the cream and pour it in a thin stream into the whipped cream cheese, mix. Pour the cream into the mold, making the first white cheesecake layer. We put in the refrigerator to freeze. For strawberry jelly, soak the gelatin, heat half of the strawberry puree with sugar and dissolve the gelatin in it. You can use frozen berry puree, in season you can take fresh strawberries (500 grams), chop them in a blender with sugar (150 grams). Pour the strawberry jelly on top of the frozen white layer and put it in the refrigerator for 2 hours. Repeat the process, prepare the white cream from the second half of the left cream, cream and gelatin. Pour the mass on top of the frozen berry layer and put in the refrigerator to harden. We heat the second part of the berry puree, dilute the gelatin in it and pour it with the last layer. We put in the refrigerator to freeze. Before serving, take the cheesecake out of the fridge a little in advance, decorate and enjoy.
